½ C butter
½ C shortening
¾ C brown sugar
¾ C sugar
8 oz cream cheese
2 eggs
1 tsp vanilla
2 T frozen orange juice concentrate, thawed
2¾ C flour
1 tsp baking soda
2 tsp cream of tartar
1 tsp salt
1½ C white chocolate chips
2/3 C dried cranberries
½ C orange juice
Directions:
Preheat oven to 375°. Put
dried cranberries to soak in a small bowl with orange juice; set aside.
Cream butter, shortening
and sugars. Mix in cream cheese until blended. Add eggs, vanilla and orange
juice concentrate and blend until smooth.
In a separate bowl, stir
together flour, baking soda, cream of tartar and salt. Add to creamed mixture
all at once; mix until just combined. Drain cranberries. Add cranberries and
white chocolate chips, blending until evenly distributed.
Drop dough by heaping
teaspoons onto ungreased baking sheet, 2” apart. Bake 10-12 minutes. Cool 1-2 minutes on baking
sheet, then transfer to wire rack to cool completely.
