I'm not a huge fan of pound cake, but it's fine. I love chocolate, so I figured I'd give a chocolate pound cake a try.
Ingredients
1 C butter, softened
1¼ C sugar
1/3 C heavy cream
½ C + 2 T cocoa powder
¼ tsp espresso powder
3 eggs
2 t vanilla extract
1½ C flour
½ tsp salt
Directions
Preheat oven to 350°F. Lightly coat 5x9" loaf pan with non-stick cooking spray; line with parchment paper for easy removal.
Cream butter and sugar until pale and fluffy. Meanwhile, warm cream and mix with cocoa powder and espresso to form a paste. Let cool, if needed (so as not to melt butter); beat into creamed butter and sugar.
Add eggs and vanilla; beat until well combined. Add flour and salt, mixing until just combined.
Scoop batter into loaf pan. Bake 1 hour 20 minutes, until toothpick inserted in center comes out clean.
