Apple Butter

1½ lb apples; peeled, cored, finely chopped
1 C sugar*
½ tsp cinnamon
1/8 tsp cloves
1/8 tsp salt
* For pure apple flavor, use white cane sugar; but the rich, "mapley-ness" of brown sugar is equally delicious.

Chop apples into a crock pot. Combine sugar, cinnamon, cloves and salt; pour over apples and mix well. Cook on high for 1 hour, covered. Reduce heat to low and cook 8 - 10 hours, stirring occasionally; mixture should be thickened and dark brown. Uncover. Continue cooking (on low) 1 more hour. Whisk, if desired, to smooth any lumps for a creamier texture.

Spoon mixture into sterile jars/containers; cover, and refrigerate (or freeze).
