Ingredients
1 15-oz can chickpeas
1 C small diced tomato
¼ C crumbled feta
¼ C chopped kalamata olives
2 T finely chopped fresh ming
1 T finely chopped fresh parsley
2 T olive oil
2 T red wine vinegar
1½ t sugar
1 t salt
½ t pepper
Directions
Drain and rinse chickpeas. Gently toss all ingredients in a bowl.
