Ingredients
2 T strained bacon fat/drippings
4 tsp minced shallot
¼ C dry sherry vinegar
½ tsp minced fresh tarragon
½ tsp sugar
¼ tsp each salt & pepper
Directions
Saute shallot in bacon fat over medium-low heat about 1 minute. Remove from heat; stir in remaining ingredients. Best when used immediately, still warm.
