1/4 C cider vinegar or red wine vinegar
1/4 C olive oil
3 Tbls maple syrup
1 Tbls Dijon mustard
1/2 tsp each salt & pepper
Combine all ingredients in a small bowl; whisk.
Keep refrigerated. Stir or shake before serving.
