Butternut Squash

MHS: Introduction to Foods and Nutrition* 

Ingredients
1 butternut squash (about 2 lb)
2 Tbls olive oil
1 tsp cinnamon
½ tsp cummin
1-2 cloves garlic, minced


Directions
Preheat oven to 400°.Peel butternut squash. Using a large spoon, hollow out seeded center. Cut into a large dice (½” to 1” cubes - just be fairly consistent for even cooking). In a bowl, toss squash with olive oil cinnamon, cumin, and minced garlic. Transfer to a casserole baking dish. Bake until soft, about 40 minutes.
