Strawberry Ice Cream

1 lb fresh strawberries
1 Tbls lemon juice
1 cup sugar, divided
2 eggs
1 C milk
2 teaspoon vanilla
2 C heavy cream

Hull and chop strawberries. Combine strawberries, lemon juice, and 1/4 cup sugar in a mixing bowl, set aside for at least an hour so strawberries soak in the sugar and lemon juice.

Beat eggs until frothy.
Add the rest of the sugar, mixing well.
Next add the milk and vanilla, stirring until well combined.
Add about half the strawberries and the cream, stirring gently until all ingredients are blended.
Pour into ice cream maker and chill according to manufacturer's directions.
Just before it's finished, dump in the remaining strawberries; mix just until well blended.

Serve immediately, or transfer to an air-tight container to freeze to desired consistency.
